The Illinois Farm Bureau recently shared some interesting facts about asparagus, one of my favorite vegetables, in "Partners," its quarterly publication, which I always enjoy reading.
Here are some of the report's highlights:
* Asparagus is native to the Mediterranean and was eaten by the ancient Greeks.
* In Illinois, asparagus season runs from April to June.
* Asparagus is a good source of fiber, folate, and vitamins A, C and K.
* Asparagus is a perennial vegetable that comes back year after year.
* Once planted, an asparagus plant takes three years to produce asparagus, but it can keep producing for 20 years.
I enjoy asparagus most when it's roasted and prefer it served with baked or grilled fish or grilled chicken.
